Attempted Tortillas and Ended Up W/ Quinoa Cinnamon Flat Bread

Well here is my attempt at making these beautiful tortillas from the blog 84th and 3rd (click the link above the picture) with my homemade quinoa flour (Click here for my tutorial on how to make your own Quinoa Flour). So if you are wanting to make tortillas make sure to visit her blog.

It took a few tries and what I ended up with is nothing like what I started out wanting to make!

Attempt #1
1 1/2 cups Quinoa flour
1 1/2 cups water
A Dash of Celery Salt
And let it sit for about 5 minutes
Then pour into your pre-warmed skillet
with a little Olive Oil
(per the directions from 84th and 3rd)
Obviously I did something wrong!!

Attempt #2
I added: 
 1 1/2 cups of water
1 Large Egg
(It was almost perfectly round, and then the hubby decided to take a tester before I was able to take a picture)

Attempt #3
I added: 
  1/2 cups of water
5 packets of  Stevia
(Here is where I started to really like it)

Attempt #4
All I did here was
add in about 1 tbsp of Cinnamon
and that was it!!! I made 3 more of these, top them with honey/jam/syrup.

So the recipe that was suppose to be tortillas turned into a really yummy bready pancake thing that I am naming Quinoa Flat Bread. 
The recipe I ended up with:

Quinoa Cinnamon Flat Bread
1 1/2 cup of Quinoa flour
4-5 cups water
(let this sit for about 5-10 minutes so the water can soak into the flour)
1 Large egg
8-10 packets of Stevia (I use Stevia in the Raw)
2 tbsp Cinnamon
Then pour into your pre-warmed skillet
with a little Olive Oil

I'm sure if you left out the Stevia and Cinnamon, there are endless possibilities to flavor combinations.
