Roasted Carrots and Squash

This has become my family's favorite way to eat their veggies, which I am totally thrilled about because I can eat a whole bowel of this and call it dinner!

Step 1: Preheat your oven to 450 deg.
Step 2: Peal the carrots (unless you buy the baby carrots)
Step 3: Cut carrots into thinner pieces 
(you may have to cut them into thirds or fourths)
Step 4: Slice your squash about 1/4 of an inch thick 
(any squash or variety of squash or other roast-able veggies will do)
Step 4: Put all the veggies in a large bowl


Step 5: Add 3 tbs of Onion Olive Oil (click here for link the recipe)
Step 6: Add a desirable amount of Italian seasoning and a dash of Sea Salt or Celery Salt
Step 7: Mix everything together (make sure all the veggies are covered with seasoning and Onion Olive Oil.)


Step 8: Put all into an oven pan and put in the oven
Step 9: If you like a bit of a crunch to your veggies bake about 20 minutes. For softer veggies 30-35 minutes
Step 10: Let cool slightly, serve and enjoy!

Onion Olive Oil

Since so many of us with IBS can no longer have onion, or if you love onion flavor but don't want to the hassle of sauteing onions ever time you go to cook, here is a great recipe. The reason this works is because the oils do not absorb the component of the onion that messes with an IBS stomach, so you get the flavor and not the pain. 

For those of you without IBS, this is a nice way of adding onion flavor without have to always saute an onion, or you go to the pantry and find that you have just run out of onions.

First I poured a full 16 oz. bottle of extra virgin olive oil
Heat it to a medium heat, the extra virgin is a now heat oil and you don't want to burn it.


Once the oil is heated, add 2 medium onions


Saute the onions until they look about the same as the picture below:
Opaque and beginning to brown 
(It's about 20 to 30 minutes)



Strain out the onion from the oil allow the oil to cool and pour back into its oil bottle. Make sure to label to your bottle so you know it from the regular Olive Oil.

Winkin', Blinkin', and Nod

For some strange reason I have had this poem being recited in my mind over and over. Not that it bothers me, it has always been on of my favorites as long as I can remember. In the 7th grade we had to memorize a poem and recite it from memory word for word and this was the poem that I chose.

Winkin', Blinkin', and Nod

Winkin', Blinkin', and Nod, one night sailed off in a wooden shoe;
Sailed off on a river of crystal light into a sea of dew.
"Where are you going and what do you wish?" the old moon asked the three.
"We've come to fish for the herring fish that live in this beautiful sea.
Nets of silver and gold have we," said Winkin', Blinkin', and Nod.

The old moon laughed and sang a song as they rocked in the wooden shoe.
And the wind that sped them all night long ruffled the waves of dew.
Now the little stars are the herring fish that live in that beautiful sea;
"Cast your nets wherever you wish never afraid are we!"
So cried the stars to the fishermen three - Winkin', and Blinkin', and Nod.

So all night long their nets they threw to the stars in the twinkling foam.
'Til down from the skies came the wooden shoe bringing the fisherman home.
'Twas all so pretty a sail it seemed as if it could not be.
Some folks say 'twas a dream they dreamed of sailing that misty sea.
But I shall name you the fisherman three - Winkin', Blinkin', and Nod.

Now Winkin' and Blinkin' are two little eyes and Nod is a little head.
And the wooden shoe that sailed the skies is a wee one's trundle bed.
So close your eyes while mother sings of the wonderful sights that be.
And you shall see those beautiful things as you sail on the misty sea,
Where the old shoe rocked the fishermen three - Winkin', Blinkin', and Nod.
